» What is Artichoke?
The Globe Artichoke is the flower bud of a large thistle type plant. Artichokes have spine-tipped leaves and edible bases and hearts. They have been cultivated since ancient times with probable origins in north Africa.
Artichokes are particularly high in anti-oxidative vitamin C and phytonutrients (chemical compounds found in plants). The two major phytonutrients found in artichokes are Cynarin and Silymarin, both of which are thought to bestow many and varied health benefits.
