Lecithin is one of those things you’re always seeing on lists of ingredients but have no idea what it actually is. Well, Lecithin is a term used to describe groups of yellow-brownish fatty substances found in animal and plant tissue and also in egg yolk.
How is Lecithin Made?
The lecithin you find on ingredients lists and in supplements is extracted from soy beans. It is obtained by degumming the oil taken from the seeds. (Degumming is a process of water refining followed by centrifugal separation).
What is Lecithin used for?
Lecithin is one of those wonder-substances that has many uses in many different industries. It is used as a rust-inhibitor in the paint industry for example. A more appealing use is as an additive to improve the flow properties of chocolate. As a nutritional supplement, lecithin has many benefits.
