What is Lecithin?

Lecithin is one of those things you’re always seeing on lists of ingredients but have no idea what it actually is. Well, Lecithin is a term used to describe groups of yellow-brownish fatty substances found in animal and plant tissue and also in egg yolk. I know what you’re thinking… yummy, but bear with me.

How is Lecithin Made?

The lecithin you find on ingredients lists and in supplements is extracted from soy beans. It is obtained by degumming the oil taken from the seeds. (Degumming is a process of water refining followed by centrifugal separation).

What is Lecithin used for?

Lecithin is one of those wonder-substances that has many uses in many different industries. It is used as a rust-inhibitor in the paint industry for example. A more appealing use is as an additive to improve the flow properties of chocolate. As a nutritional supplement, lecithin has many benefits. Studies have shown that lecithin derived from soy can lower your cholesterol level while at the same time increasing the amount of good cholesterol in the blood. Other benefits range from helping to keep your heart and liver healthy to improving the transport and metabolism of fat around the body. It can also improve memory, learning and reaction time. Another benefit is an ability to help relieve arthritis.

How does Lecithin work?

The liver synthesizes lecithin from food and distributes it throughout the circulatory system to prevent the destruction of cells through oxidation, and to keep cellular structures strong and healthy. The active constituent of lecithin is choline which facilitates the digestion of fats, keeps cell membranes working properly, helps with cell communication and also controls the movement of nutrients, fats, wastes and ions in cells.

I use Lecithin to make Liposomal Vitamin C ... but have a problem with anything to do with Soya! There is a sunflower based lecithin ... do you know of it?
